​Easy Apple Cake
You Will Need
2/3 to 3/4 cup sugar (how low can you go?!)
2 cups unbleached white flour
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon allspice
3/4 cup canola oil
3/4 cup unsweetened applesauce (or use two 4 oz. containers)
​2 eggs, beaten
3 cups peeled, cored, and diced apples (Fuji apples stay firm)
1 cup raisins
1/2 cup chopped walnuts

Makes about 18 servings (serving size: 2 x 3"). 
What To Do
Preheat oven to 350º F.  

With a wire whisk, mix all dry ingredients in a large bowl and wet ingredients in a medium bowl.  Mix everything together with a mixing  spoon. 

Bake in an ungreased 9 x 13 inch pan for about 40 minutes or until a pick inserted in the center comes out clean.  Cool slightly and serve with low-fat frozen vanilla yogurt. Refrigerate leftovers.

Note: For gluten-free cake, replace the white and wheat flour with an equal amount (3 cups total) of King Arthur's Gluten-Free Measure for Measure Flour.
