Bran Muffins
You Will Need
1/2 cup unbleached flour
1/2 cup whole wheat flour 1 cup coarse bran 1 teaspoon baking powder 1/2 cup chopped walnuts 2 eggs 1 cup milk OR plain yogurt 2 tablespoons melted butter 1/3 cup honey 3/4 cup raisins Makes 12 muffins

What To Do
Preheat oven to 400º F.
In a large bowl, whisk together flours, bran, and baking powder. Stir in walnuts and raisins. In a medium bowl, whisk together eggs, milk (or yogurt) and melted butter. Stir in honey. Combine wet and dry ingredients together, just enough to moisten. Place in muffin tins and bake for about 20 minutes. Source: Mary Concannon
