"Grate" Zucchini Bread
You Will Need
3/4 cup whole-wheat flour
3/4 cup unbleached white flour 
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 egg white
1 whole egg
6 tablespoons canola oil
1 1/4 cups packed, finely grated zucchini (about 1 medium zucchini)
1 teaspoon vanilla
1/2 cup finely chopped nuts (optional)
1/3 cup raisins (optional)
Makes 1 loaf (16 servings) 
What To Do
Preheat oven to 350ºF
 
In a large bowl, combine the whole-wheat and white flours, sugar, baking powder, baking soda, cinnamon, nutmeg and cloves.

In a medium bowl, mix together the egg white, whole egg, oil, zucchini and vanilla.  Add this mixture to the flour mixture, stirring the ingredients to combine them well.  Stir in the nuts and /or raisin, if desired.  Our the batter into a greased 9 x 5 x 3 inch pan. Bake for 50 to 60 minutes or less until a pick inserted in the center comes out clean.
