Pie Pastry
You Will Need
2 cups sifted flour
1 teaspoon salt (optional) 1/2 cup canola oil 5 tablespoons ice water Note: Because this pie crust is made with canola oil, it is a much healthier recipe than using vegetable shortening or butter. Makes enough pastry for bottom and top of one pie

What To Do
Preheat oven to 450ºF
Beat oil and water with electric mixer until thick and creamy. Pour over entire flour surface immediately. Mix with fork or pastry cutter. Form into a ball. Wrap ball in plastic wrap and chill for about 30 minutes or more in refrigerator. Tape four corners of a large piece of wax paper onto counter top. Sprinkle with flour and place half of the dough ball on floured surface. Cover with another large piece of wax paper. Roll pastry with a rolling pin. Remove tape from wax paper and flip pastry into 9 inch pie pan. If baking an empty pie shell, pierce pastry with fork a few times and then bake for 12 – 15 minutes. Or, fill pie shell with ingredients, use other half of pastry ball for top and bake according to pie directions. Source: Regina Clinton
