Speedy Egg Sandwich
You Will Need
1 egg (for more protein, add 1 egg white)
Low-fat milk (less than 1 tablespoon)
​Vegetable oil or spray

2 slices whole wheat bread (OR whole wheat English muffin, pita pocket, tortilla)
Slice of cheese (optional)
Salsa or ketchup (optional)
Serves 1
What To Do
In a glass dish, rub or spray a small amount of vegetable oil. Crack egg into dish (add another egg if desired and remove yolk). Add splash of milk (less than 1 tablespoon). Scramble egg and milk together with fork or whisk. Microwave on power level 6 for about 1 1/2 minutes.  While egg is cooking, toast whole wheat bread or English muffin.  Place slice of cheese between toast slices to melt.  Add cooked scrambled egg topped with salsa or ketchup.
