Spinach Orzo Salad
You Will Need
Large bag fresh spinach, pre-washed
Half large red onion
Orzo, 1/2 cup dry
Oil and vinegar salad dressing such as:
      - Garlic Expressions salad dressing (try Wegmans), 1/3 bottle, OR
      - Wishbone EVOO Garlic Basil dressing, 1/3 bottle, OR
      - Homemade - try your own extra virgin olive oil and vinegar
        (2 parts oil to 1 part vinegar); add 1/2 teaspoon Dijon mustard
Feta cheese, crumbled, 5 oz container
Sliced black olives, 4 oz can drained
Sundried tomatoes in oil, 8 oz jar 
Hydroponic cucumber

Serves 4 people as a main dish. Save leftovers for lunch the next day. 
What To Do
Bring water to a boil and add 1/2 cup orzo.  Follow package cooking instructions. Drain water after cooking and rinse orzo in cool water.

On a cutting board: dice red onion; chop sundried tomatoes; cut cucumber into large chunks. 

​In a large salad serving bowl, mix together diced red onion, chopped sundried tomatoes, chopped cucumber, sliced black olives and some of the dressing until coated. Tear open spinach bag and add spinach to salad bowl while pulling off large stems and discarding any wilted leaves. Add crumbled feta cheese.

Toss all ingredients together with remaining salad dressing.
