Spinach Squares
You Will Need
3/4 cup unbleached white flour
1/4 cup whole wheat flour 1 teaspoon baking powder 1 cup nonfat milk 2 eggs, beaten 10 oz frozen spinach, thawed and drained (OR 2 bags fresh) 12 oz shredded, low-fat Cheddar cheese 1 onion, diced Serves 12

What To Do
Preheat oven to 350ºF
In a large bowl, whisk together flours and baking powder. Add milk and eggs. Mix in spinach, cheese and onion. Spread in greased 9 x 13 inch pan. Bake 30 minutes. Serve with salsa if desired. Source: Adapted from University of Maryland Extension
