Stir-Fried Garlic Broccoli
You Will Need
1 tablespoon olive oil
2 cloves sliced, fresh garlic or 1 teaspoon minced garlic
1 head broccoli, washed and cut into chunks
1 tablespoon low-sodium soy sauce

Serves 4
What To Do
Heat the oil on medium-high in a large pan or wok. Add garlic and stir. Add broccoli and stir to distribute oil. Turn heat to medium and cover (add some water if steam-cooking is preferred). Cook for 5 minutes. Turn off heat. Uncover and stir in soy sauce.
Variations:
  • Substitute cabbage, carrots, zucchini, kale or your favorite vegetable for all or part of the broccoli.
  • Add leftover pieces of cooked chicken just before covering, and increase soy sauce and garlic to taste.  Serve over brown rice for a complete, quick meal.
