Sweet Potato Soup
You Will Need
3 large sweet potatoes
olive or canola oil large onion, finely chopped 48 oz. vegetable broth (e.g. 1 1/2 boxes)* OR use equal amount leftover water from steamed vegetables 1 small plain yogurt (or, 3 large scoops from large container) 1 teaspoon nutmeg *prefer Pacific Foods Organic Low Sodium Vegetable Broth Serves 2

What To Do
Scrub sweet potatoes with a vegetable brush under tap water and microwave them on a paper towel until tender. In a large saucepot, sauté onion in oil Scoop out sweet potato from skins and add to pot. Stir in remaining ingredients.
Blend with a stick mixer, or puree in a food processor, or blender. Bring to boil, reduce heat and simmer for 20 minutes. Source: Mary Concannon
